Our pans are produced from a special red shale (clay) deposited by glaciers thousands of years ago around Alfred, New York. The clay is molded into pans under thousands of pounds of pressure. They are then treated with a terra sigillata coating created from a modified recipe of the ancient Greeks. The exclusive terra sigillataTM coating is the result of research performed in conjunction with Alfred University. The superfine surface of tiny crushed clay particles prevents the food from sticking. These exceptional properties of clay, coating and the special "Alfred" method of producing our pans will permit food to cook evenly and give meals a unique texture and quality. Our pans are hand-finished and no two are exactly alike.
